Easy Breezy Summer Rolls

Dear Food Diary:
I’ll be the first to admit, I’m no expert in the kitchen. I can do certain “signature” dishes well, but I don’t cook much, I live in a studio apartment, so space is very limited and I hate cleaning up, although cooking can be fun. So when I say these are easy, trust me, it’s really easy, if chubby can do it, anyone can.

GRILLED MEXICAN CORN a la Cafe Habana


Dear Food Diary:
Had a BBQ over the weekend with a couple good friends and fellow foodies. I stopped by the farmer’s market last week, and picked up a couple sweet summer corn, 5 for $2, you can’t beat that.

I’ve always loved Cafe Habana’s Grilled Mexican Corn, so this was my attempt to recreate it at home. I’m not one who measures, just eyeball everything… more of a freestyle cook. I couldn’t find Cotija Cheese at my local supermarket, but fortunately my friend found it at her nearby Mexican grocery shop.

Lotus’ “Flower” Best Summer Cocktail

Dear Food Diary,
Went to Lotus with the girls tonight, had the best summer cocktail! I highly recommend their LOTUS FLOWER (chunks of watermelon, fresh peach puree, Malibu rum and Stoli vanilla). It was divine. A sip, and you feel the freshness of the watermelon, with that hint of coconut and smoothness of the vainilla. Chilled and sweet so perfect for summer, a very girly drink. It made me feel pretty for some reason. Maybe because it has the right amount of alcohol, not making me tipsy, just smiling and blushing.
